Seriously, who wouldn’t love a juicy pork loin wrapped in bacon?
A couple weeks ago I told you how often we cook pork loin around here when I shared my Sweet & Smoky Green Chile Soup with ya’. Which is a lot, just in case you didn’t see that delicious recipe yet. Pork loin is so great for an easy weeknight meal that I always have one in my fridge ready to go. The soup I made shows just how versatile a cut it is (and the fact that it’s so lean is just a bonus), but this bacon-wrapped pork loin? This is my favorite so far.
I didn’t use just any ol’ pork loin, either. I picked up a Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet – that’s right, it’s bacon flavored. It is SO GOOD just on its own. We threw one on the grill last week and didn’t do a thing to it! 25 minutes later we had a juicy, tender pork loin with hardly any effort.
I stuffed the Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet with a good blue cheese (about a quarter to half a cup) then wrapped it all in Smithfield Bacon! Pork on pork is always a good idea, in my opinion. To really make the flavors pop, I brushed the bacon-wrapped pork loin with a mixture of honey and balsamic vinegar. It’s such a simple step but really brings the flavors together.
This recipe comes together in about 30 minutes, start to finish! It’s perfect for busy weeknights yet elegant enough that you could serve it to guests. My girls loved it (I’m fortunate that they’re both blue cheese lovers like me)!
Don’t be concerned if a little blue cheese leaks out a bit. The bacon helps to keep it all in and also helps to keep the pork loin very moist. I may add some dried cherries to the blue cheese the next time I make it (doesn’t that sound yummy?). Because there most definitely will be a next time!

- 1 Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet
- 8-10 slices Smithfield Bacon (not thick-cut)
- 1/4 - 1/2 cup crumbled blue cheese
- 1/4 cup honey
- 2 T balsamic vinegar
