KIT KAT Halloween Brownies

These KIT KAT Halloween Brownies are fudgy and loaded with KIT KAT Candy Bars. They are super cute and festive for the holiday and simple to make!

Today, I am teaming up with The Hershey Company to bring you these adorable Halloween-themed brownies. KIT KAT Bars are one of my favorite candies. I love how simplistic they are and yet they are completely delicious. The crisp wafer paired with the smooth and silky chocolate is a perfect combination of ingredients.

The KIT KAT Candy Bars were the perfect addition to my favorite brownie recipe that I have here on the blog. The Malted Buttercream frosting is a wonderful paring and adds a great and unique flavor to the rich brownies.

To complete the festive dessert, I topped it with additional chopped Kit Kat bar and some cute Halloween sprinkles. I used eye balls but you can use whatever kind you want.

These KIT KAT Halloween Brownies would make a phenomenal addition to your Halloween this year! These were a hit with my whole family! My kids loved how fun they looked and how even more exciting they were to eat!

Classic Vanilla and Chocolate Marbled Bundt Cake

I do love a good bundt cake. I feel like they’re somehow less fussy and formal than layer cake, but still, you know… Cake.

That’s why I zeroed right in on this recipe for Vanilla and Chocolate Marbled Bundt Cake in my friend Irvin Lin’s new cookbook, Marbled, Swirled, and Layered.

He makes it with a chocolate-coffee syrup swirled into the batter. Plus chocolate chips. Plus a thick vanilla glaze over top. Game, set, match.

If you’ve been reading Simply Recipes for the past few months, you have no doubt noticed some of the recipes Irvin Lin has shared here, like his Easy Peanut Butter Fudge and these very-tempting Chocolate Gingerbread Cookies. He does good things with butter and sugar.

In Marbled, Swirled, and Layered, he takes desserts up a notch or three. Not only are all the recipes visually stunning – as you no doubt guessed, they all incorporate some element of being beautifully marbled, swirled, or layered – but also, the flavor combinations are just out of this world.

Allow me to run through a few of the recipes that caught my eye as I paged through the book: Roasted White Chocolate Brownies with Strawberry-Balsamic Swirl, Apple Roses and Spiced Brown Butter Tart, Malted Milk Chocolate Cake with Salted Caramel Frosting, 8-Layer Orange-Scented Smith Island Cake, and Hazelnut-Cocoa Linzer Cookies with Blackberry-Mint Jam.

No, Irvin is not one to shy away from flavor.

With every recipe, I feel like I learn something new about the way seemingly very different ingredients can actually come together in interesting and unexpected ways. I especially love the way Irvin brings savory flavors into play, like that balsamic swirl in the brownies. It’s never so much savory that the recipe becomes savory, but just enough to make you perk up and pay attention.

If you are the kind of baker who loves to mix-and-match and have a little fun in the kitchen, then I advise you to pick up a copy of this book immediately.

You might be concerned that this is a book for serious bakers only, and yes, most of the recipes require a bit of focus as you’re making them so you don’t accidentally swirl when you should have layered. But I think that Irvin has include a nice mix of “dedication levels” in this collection.

There are some recipes that require very little planning or baking know-how (particularly in the cookie chapter and breakfast goods chapter), a good majority that ask you to set aside an hour or two for some baking fun-times (like today’s bundt cake), and then a few that ask you to clear your schedule and pull all your baking pans out of the cupboard.

Now, let’s talk about this bundt cake.

I confess that I like to eat cake more than I like to bake it, and this recipe was just my speed. Low effort, high reward.

You only need to make one batter (I’ve seen other recipes that have you make two, one chocolate and one vanilla), and then you scoop about a third of it into a separate bowl to mix with the chocolate syrup. This chocolate batter gets sandwiched between two layers of vanilla, which then get swirled together just before going in the oven.

I fretted over my marbling technique the entire time the cake was baking and cooling, but I didn’t need to worry. It was perfect. I love that there were distinct chocolate bits and distinct vanilla bits – tasty and so very pretty. (Follow Irvin’s advice to “sometimes dig deep to the bottom and lift up” as you’re swirling.)

The cake itself was also incredibly moist and tender, which has me thinking that this might just become my new go-to cake for all future cake-worthy events, forever and always.
To sum up, I’m a big fan of both Irvin and his new book. I highly recommend putting this one on your wish list this year.

Grain Free Hot Cocoa Brownie Bites

Delicious little brownie bites that taste like your favorite cup of hot cocoa. These bites are a perfect treat and only take 15 minutes to make! Made with Simple Mills tasty grain free chocolate baking mix!

I have a confession to make. I snuck brownies into cookie week. I know I’ve got a few mad brownie lovers out there who crave a tasty chocolate treat like no other. These are for you chocoholics. (Brownieholics?)

Before we address these brownie bites, we need to have a MAJOR discussion about Simple Mills because lately I’ve become absolutely obsessed with their baking mixes and frostings. Like can’t-stop-licking-the-bowl-clean-obsessed.

And their chocolate frosting? Don’t even get me started because it could be the best frosting I’ve ever had. I’ve found myself digging it into the jar wayyyy too often. Last week I frosted my avocado black bean brownies with it and Tony ate almost the entire batch. YUMMMM.

The truth is that they are one of my favorite baking mixes for both taste but because they also contains simple, wholesome ingredients that you can see and pronounce. Simple Mills mixes are gluten free, soy free, gum free, non GMO and paleo friendly which means you can bake them for your friends and family who may have allergies or sensitivities.

This year I wanted to create something DIY for the holidays and decided on these adorable hot cocoa brownie bites that you can easily put in jar and send off to your loved ones.

Just pour Simple Mills chocolate muffin and cake mix, coconut sugar and marshmallows into a jar; tie on a note or card with instructions on how to make and you’re done! These treats are perfect for holiday cookie exchanges because they take 15 minutes from start to finish and make 24 little bites of love.

Easy? Check. Delicious? Check. Super adorable? Double check. Hope you get a chance to make these and try out Simple Mills!

Chocolate Fondue

Looking for fun and easy chocolate dessert experience? Make chocolate fondue!
My friend Garrett taught me how to make this years ago. It’s a great way to make dessert a more interactive experience. Everyone gets to choose their own “dip-able” fruit—whether it’s strawberries, bananas, or marshmallows, and it’s incredibly easy to make. Only needs three ingredients—chocolate, cream, and a pinch of salt.
You can add extra flavors to the chocolate too, like some peppermint extract for peppermint chocolate fondue, or cinnamon and chili for a Mexican spin, or Amaretto or Bailey’s Irish cream for a more grown up version.
And if it’s just the two of you, chocolate fondue is a great way to end a romantic meal at home. The dip-ables can be prepped in advance, and the chocolate sauce comes together in just a few minutes.

It does help to have a fondue pot, to keep the chocolate warm while everyone is dipping into the pot. That said, if you don’t have that set-up, you could easily use a regular pot. Just put an oven mitt on the table and place the hot pot of melted chocolate on top of it to start dipping. Return it to the stove and stir in a little more hot cream if it starts to stiffen too much.
What to dip in you chocolate fondue? Fruit is the obvious place to start—strawberries, bananas, chunks of pineapple, dried apricots, pears. Or you can go long on the sweet vector and dip brownies, pound cake, marshmallows, or even ladyfingers.

Chocolate Fondue Recipe

  • 12 ounces of milk or dark chocolate (chips or roughly chopped if from a block)

  • 1 cup (8 ounces) of heavy whipping cream

  • A pinch of salt

  • Dip-ables such as strawberries, banana pieces cut into 1-inch chunks, dried appricots, candied ginger, apple pieces
