Part of me thought that once summer hit, my life would slow down a bit. My aunt always told me that once you get kids in school and a bunch extra curricular activities, May becomes busier than December. She is right. Except, may came and went and we are in the middle of June now and it still hasn’t slowed down. Probably because there have been some fun big changes going on, like this new site design for example :)

I am currently working on an ingredient search so if you have something like, “chipotle peppers”, you can search by that specific ingredient and every recipe that contains it will pull up! How need is that! You will also notice the visual recipe index if you click on “recipes” up at the top. It is STUNNING and something I am super excited for! Anyway, I hope you enjoy it and are able to now find exactly what you are wanting and that everything is clean and easily readable.

Ever since creating this Skillet Chipotle Ranch Chicken, I have been OBSESSED with the flavor combo. I even have a few more recipes in the queue that have those particular flavors. Trust me on this, the coolness both that the ranch flavor provides with the cream cheese and the kick of heat from the chipotle peppers is one all need to experience :)
As I was brainstorming new appetizer ideas for some of the summer get togethers we are either having or attending, I knew I wanted to create something using these two wonderful ingredients.

- 16 ounces cream cheese, softened
- 1 ranch package, dry
- 4 chipotles in adobe sauce, chopped
- 1½ cup cheddar cheese, shredded and divided
- ¼ cup chicken broth
- 1 cup chicken breast, cooked and chopped
